Jasper County BBQ does one thing and does it right — slow-smoked Georgia pit barbecue the way it's been done in this part of the state for generations. The pitmasters start early every morning, firing hickory and oak to smoke pork shoulders, ribs, and whole chickens low and slow until they reach that perfect point where the meat pulls apart clean and the smoke ring runs deep. Their Brunswick stew is thick, meaty, and made fresh every day. The sides — baked beans, coleslaw, potato salad, cornbread — are made from scratch and are as good as the meat. Open Wednesday through Saturday until they sell out, which happens most Fridays before 3pm. Plan accordingly.
